As a kid, I loved peppermint patties. The soft silky texture and the sweet, refreshing peppermint taste. Peppermint patties are truly a joy to eat.
So, of course, I created a vegan version. These vegan peppermint patties are made with whole food plant-based ingredients. So they taste like that refreshing and sweet peppermint candy but they're actually healthy - minimal sugar, plant ingredients, and even some extra protein hidden in there.
They make a delicious holiday (or anytime) treat!
Step 1. Add the coconut, almond powder/flour, syrup, vanilla, salt, and peppermint extract to a food processor and pulse until a loose dough forms.
Step 2. Scoop the dough into tablespoon-sized balls. Then flatten into discs. Freeze 10 minutes.
Step 3. Meanwhile, in a microwave safe bowl, melt the chocolate on 50% power, stirring every 30 seconds until completely melted and smooth.
Step 4. Using a fork, coat each peppermint disc in chocolate. Arrange on a baking tray topped with a wire rack or a piece or parchment to drip. Top with crushed candy canes if desired. Refrigerate 5-10 minutes to set. Enjoy!
The best sub for almond powder is almond flour.
Store these bars in the refrigerator or freezer. Avoid leaving the bars on the counter for too long to prevent melted chocolate.
These bars will last for several weeks in the fridge and several months in the freezer.
