Burger Patty

  • 1 Pound Dry Chickpeas
  • ½ Teaspoon Baking Soda
  • 1 Small Red Onion quartered
  • 8 Cloves Garlic
  • 1 Cup Fresh Parsley
  • ½ Cup Chopped Scallions
  • ¼ Cup Loosely Packed Tarragon
  • ¼ Cup Roughly Chopped Chives
  • 1 Tablespoon Rice Vinegar
  • 2 Tablespoons Kosher Salt
  • 1 Teaspoon Ground Black Pepper
  • ½ Teaspoon Cayenne
  • 1 Cup Oat Flour
  • 2 Teaspoons Cornstarch
  • ½ Teaspoon Baking Powder
  • Toppings: spinach, tomatoes, pickles, pickled red onions

Green Goddess Dressing

  • ¾ Cup Non-Dairy Yogurt
  • 1 Tablespoon Chopped Parsley
  • 1 Tablespoon Chopped Tarragon
  • 1 Tablespoon Chopped Chives
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon Rice Vinegar
  • 1 Teaspoon Garlic Powder
  • Dash Cayenne
  • Salt & Pepper to taste

Instructions

  • The day before you want to make the burgers, soak the chickpeas and baking soda in lukewarm water. The beans will expand as they soak, so make sure to cover them in several inches of water.
  • Add the chickpeas, onion, garlic, parsley, scallions, tarragon, chives, rice vinegar, salt, pepper, and cayenne to a food processor. Blend until mostly smooth. Don't over mix.
  • Transfer the mixture to a bowl and refrigerate for an hour or so. Preheat the oven to 400°F or air fryer to 375°F. Line a baking sheet or air fryer with parchment paper.
  • Remove the mixture from the fridge. Stir in the oat flour and baking powder.
  • Shape the mixture into ½ cup patties. Flatten and place on the prepared tray.
  • Bake or air fry for 13-15 minutes.
  • Meanwhile make the green goddess dressing. Mix all the dressing ingredients in a small bowl.
  • When the patties are cooked, assemble the burgers. Add your favorite toppings and drizzle with green goddess dressing. Enjoy!
