Air Fryer Sweet Potato Nachos are the crispiest, cheesiest nachos made from sweet potatoes! They are completely oil-free and plant-based. Load them up with your favorite toppings for a healthier nacho alternative.
Toppings: black beans, mushroom walnut taco meat, tomatoes/salsa, jalapeño, corn, pickled red onions, guacamole, olives, cilantro
Instructions
Preheat the air fryer to 350°F. For the oven version, preheat the oven to 450°F.
Thinly slice the sweet potatoes (optionally, use a mandolin set at 3mm). Arrange in an even layer in the basket of your air fryer and cook for 10-15 minutes, until the potatoes become crispy but not burnt. For the oven version, line a baking sheet with parchment paper, arrange the sweet potatoes in an even layer and bake for 15 minutes.
Meanwhile, make the vegan queso.
Transfer the potatoes to a tray or other serving plate. Top with the queso and your preferred toppings. Enjoy!
