Balsamic Roasted Beets

Balsamic Roasted Beets are an easy side dish for a holiday dinner or weeknight meal. With a balsamic and maple syrup glaze.

Ingredients

  • 3 Medium Beets
  • 1 Tablespoon Balsamic Vinegar
  • 1 Tablespoon Maple Syrup
  • ½ Teaspoon Salt
  • Teaspoon Black Pepper optional
  • Fresh Thyme optional garnish

Instructions

  • Preheat the oven to 400°F.
  • Wrap beets individually in aluminum foil. Place on a baking sheet and roast for 45-50 minutes, until fork tender. (If you have smaller or larger beets, this could take as little as 40 minutes, or as long as 75 minutes.)
  • Remove the beets from the oven. Let cool for a few minutes, until they are cool enough to handle. Use your fingers or a paper towel to peel away the skin.
  • Slice each beet into rounds.
  • Transfer to a bowl and toss the cooked beets with the balsamic, maple syrup, salt, and pepper.
  • Return the beets to the oven and roast 10-15 more minutes.
  • Serve with a garnish of fresh thyme.
