3MediumBeets
1TablespoonBalsamic Vinegar
1TablespoonMaple Syrup
½TeaspoonSalt
⅛TeaspoonBlack Pepperoptional
Fresh Thymeoptional garnish
Instructions
Preheat the oven to 400°F.
Wrap beets individually in aluminum foil. Place on a baking sheet and roast for 45-50 minutes, until fork tender. (If you have smaller or larger beets, this could take as little as 40 minutes, or as long as 75 minutes.)
Remove the beets from the oven. Let cool for a few minutes, until they are cool enough to handle. Use your fingers or a paper towel to peel away the skin.
Slice each beet into rounds.
Transfer to a bowl and toss the cooked beets with the balsamic, maple syrup, salt, and pepper.
Return the beets to the oven and roast 10-15 more minutes.
