This Vegan Cauliflower Béchamel Sauce is thick, rich, and creamy - it's also entirely plant-based. This white sauce is made with cauliflower and beans for a healthy sauce to serve with pasta or to create a creamy texture in any dish.

  • 2 Heads Cauliflower cut into florets
  • 1 15 Ounce Can White Beans including liquid
  • 6 Cloves Garlic
  • 2 Tablespoons Nutritional Yeast
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Onion Powder
  • 1 Teaspoon Kosher Salt
  • ¼ Teaspoon Hot Pepper Flakes
  • ¼ Teaspoon Black Pepper

Instructions

  • Steam the cauliflower until very tender, about 15 minutes.
  • Transfer the cauliflower to a blender. Add the can of beans (including the liquid), garlic, nutritional yeast, lemon juice, onion powder, salt, hot pepper flakes, and black pepper. Blend until smooth.
  • Season with salt and pepper to taste. Serve with your favorite pasta and enjoy!
