This vegan friendly Creamy Lemon Orzo is a bright and comforting one-pot pasta dish. It has a bright lemony flavor, and is incredibly luscious and creamy. Great as a light dinner or flavorful side dish.

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil optional
  • 2 Medium Shallots minced
  • 4 Cloves Garlic minced
  • 8 Ounces Orzo Pasta
  • Zest & Juice of 1 Lemon
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper
  • 2 ½ Cups Vegetable Broth
  • 4 Ounces Vegan Cream Cheese
  • Vegan Parmesan or Cashew Parm to serve

Instructions

  • Heat the oil in a large pot over medium heat. Add the shallot and garlic and cook, stirring often, for 3-5 minutes until the shallot is soft and translucent.
  • Add the orzo, lemon juice, lemon zest, salt, and pepper. Stir and toast for 30 seconds.
  • Add the vegetable broth and bring to a boil. Simmer for 7-9 minutes, stirring often, until the orzo is al dente and the mixture looks thick.
  • Turn the heat to low and stir in the cream cheese.
  • Serve with a garnish of vegan parmesan.
