Ingredients

  • 2 Pounds Sweet Potatoes
  • 2 Tablespoons Vegetable Stock
  • 2 Tablespoons Date Syrup
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper
  • 1 Cup Chopped Fresh Cilantro

Instructions

  • Preheat the oven to 450. Line a baking sheet with aluminum foil.
  • Chop the sweet potatoes into cubes, approximately ½-inch thick. Place in a large bowl.
  • In a small bowl, mix the vegetable broth, date syrup, cumin, cayenne, salt, and pepper.
  • Pour the mixture over the sweet potatoes and stir to coat.
  • Arrange the sweet potatoes in one layer on the baking sheet. Bake for 15 minutes, stir, and then bake another 10-20 minutes, until the potatoes are starting to brown.
  • Remove from the oven. Place the potatoes back in the large bowl and stir in the chopped cilantro. Taste and season with additional salt and pepper. Enjoy!
