2CupsFrozen Shelled Edamame, cooked according to package directions
2Large Carrots, grated
2Baby Cucumbers, sliced and quartered
1Red Bell Pepper, diced
1 ½CupsShredded Red Cabbage
4Bunch Scallions, sliced, plus more for garnish
¼CupPeanuts, plus more for garnish
⅓CupPeanut Sesame Dressing

Instructions
Toss all the ingredients except the sesame seeds in a large bowl.
