Slice the tofu into 2-3 patties each - I cut each of my blocks in half height-wise, but thirds would work too. Use a pairing knife to cut cross-hatches into one side of each block, being careful not to cut all the way through the patties.
In a small bowl, whisk together the sauce.
Heat a large skillet. Add the oil, if using. Add the tofu to the pan and cook 3-5 minutes per side, until lightly browned.
Once your tofu is initially browned, begin brushing on the glaze. Brush on 2 tablespoons of glaze at a time, and cook for 2 minutes per side. Flip, add more glaze and cook another two minutes. Repeat several times until all the glaze is used. Serve and enjoy!
