Ingredients

  • 1 15 Ounce Can Chickpeas drained and rinsed OR 15 Ounces Mashed Steamed Sweet Potato
  • 1 Cup Homemade Oat Flour
  • ½ Cup Nut Butter like mixed nut butter or cashew butter
  • ½ Cup Maple Syrup
  • 1 Tablespoon Flax + 2 Tablespoons Water
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • Cup Vegan White Chocolate Chips optional or equivalent amount of raisins or chopped walnuts

Instructions

  • Preheat the oven to 350°F. Line an 8" x 8" baking pan with parchment paper.
  • Add all the ingredients except the chocolate chips to a food processor and blend until smooth.
  • Stir in the chips or other add-ins.
  • Press the mixture the prepared baking pan and sprinkle with additional chocolate chips, if desired. Bake for 25-30 minutes, until a toothpick inserted in the center of the pan comes out clean and the blondies feel firm to the touch.
  • Let cool at least 10 minutes before slicing. Cut into 9-16 bars. Enjoy!
