Instructions
Add all of the dressing ingredients to a blender and blend until smooth.
Add the chickpeas to a medium bowl and use a fork or potato masher to mash slightly.
Add the cucumber, cabbage, scallion, and the dressing. Mix well.
Serve sandwich style with vegan mayo or hummus and lettuce.
