- 4-6 Cups Spinach
- 4 Medium Plums
- ½ Medium Red Onion sliced
- ½ Cup Pecans
- ⅓ Cup Crumbled Vegan Feta optional
Mustard Vinaigrette
- 3 Tablespoons Balsamic Vinegar
- 2 Tablespoons Dijon Mustard
- 2 Tablespoons Non-Dairy Yogurt
- 1 Tablespoon Maple or Date Syrup
- ½ Teaspoon Salt
Slice the plums into eight wedges each.
Grill 3-5 minutes per side on a non-stick griddle or lightly oiled grill.
Meanwhile, prepare the dressing. Add all the dressing ingredients to a small bowl or mason jar. Mix well.
When the plums are done, assemble the salad. Place the plums, pecans, and onions on a bed of spinach. Drizzle with dressing. Enjoy!
