Halloween Jack-O-Lantern Stuffed Peppers

Stuffed Orange Bell Peppers with Lotus Foods Organic Forbidden Rice are a fun and spooky Halloween dinner. Create a Jack-O-Lantern by carving a face into your bell pepper and stuffing it with a rice and black bean mixture.

Ingredients

  • 6 Large Orange Bell Peppers
  • 2 Cups Lotus Foods Forbidden Rice dry
  • 1 Large Yellow Onion sliced
  • 1 15 Ounce Can Black Beans drained and rinsed
  • 1 Tablespoon Garlic Powder
  • 1 Teaspoon Salt
  • ½ Teaspoon Chili Powder
  • 2 Tablespoons Chopped Parsley

Instructions

  • Preheat the oven to 425°F.
  • In a medium pot, cook the rice according to the package directions.
  • Slice the top off of each pepper and scoop out the seeds. Use a paring knife to cut out a jack-o-lantern face onto the side of the pepper.
  • Arrange the peppers in a baking dish and bake in the oven for 15 minutes.
  • In a small pan, sauté the onion, using a splash of water if the onion starts to stick. Cook 5-7 minutes, until soft.
  • Stir in the black beans, garlic powder, salt, and chili powder. Cook a few minutes to warm the beans.
  • When the rice is cooked, stir in the bean mixture.
  • Divide the mixture evenly between all the peppers. Sprinkle with parsley, if desired. Serve and enjoy!
