6Large Orange Bell Peppers
2CupsLotus Foods Forbidden Ricedry
1Large Yellow Onionsliced
115 OunceCan Black Beansdrained and rinsed
1TablespoonGarlic Powder
1TeaspoonSalt
½TeaspoonChili Powder
2TablespoonsChopped Parsley
Instructions
Preheat the oven to 425°F.
In a medium pot, cook the rice according to the package directions.
Slice the top off of each pepper and scoop out the seeds. Use a paring knife to cut out a jack-o-lantern face onto the side of the pepper.
Arrange the peppers in a baking dish and bake in the oven for 15 minutes.
In a small pan, sauté the onion, using a splash of water if the onion starts to stick. Cook 5-7 minutes, until soft.
Stir in the black beans, garlic powder, salt, and chili powder. Cook a few minutes to warm the beans.
When the rice is cooked, stir in the bean mixture.
Divide the mixture evenly between all the peppers. Sprinkle with parsley, if desired. Serve and enjoy!
