Ingredients

  • 1 Pound Jicama, cubed
  • 3 Large Carrots, sliced and quartered
  • 3 Baby Cucumbers, sliced and quartered
  • 2 Cups about ½ large Pineapple, diced
  • 1 Cup Diced Strawberries
  • 1 Jalapeño, seeds removed and finely minced
  • 3 Tablespoons Minced Cilantro
  • 3 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Maple Syrup
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper

Instructions

  • Add all the ingredients to a large bowl and toss well to coat.
  • Transfer to a serving platter and serve.
