Ingredients

  • 6 Cups Mixed Greens
  • 1 Medium Head Fennel cored and sliced
  • ½ Cup Cashews
  • 2 15 Ounce Cans Mandarin Oranges drained; (ideally in orange juice, not syrup - if so, reserve juice for the dressing)
  • 2 Medium Avocados sliced
  • Cup Dried Cranberries
  • Cup Vegan Feta optional

Orange Dressing

  • 3 Tablespoons Orange Juice can use juice from your mandarins
  • 3 Tablespoons Agave or Maple Syrup
  • 2 Tablespoons Water or Olive Oil
  • 2 Tablespoons Dijon Mustard
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper

Instructions

  • In a small bowl whisk together the dressing ingredients.
  • Assemble the salad. Place a bed of greens on a large platter or in a large bowl. Top with the fennel, mandarins, avocado, cashews, cranberries, and feta if using. Drizzle with the dressing.
