Mint Chocolate Chip Soft Serve is the perfect St. Patrick's Day treat! This mint-green ice cream is completely vegan and sugar-free.

Ingredients

  • 3 Medium Frozen Bananas
  • 1 Cup Loosely Packed Spinach OR ½ Teaspoon Green Spirulina Powder
  • ½ Cup Loosely Packed Fresh Mint OR ½ Teaspoon Mint Extract
  • 2 Tablespoons Non-Dairy Milk
  • ¼-1/2 Cup Vegan Chocolate Chips

Instructions

  • Take the bananas out of the freezer and allow to thaw for 5-10 minutes, so they become easy to blend.
  • Add the bananas, spinach/spirulina, and mint/mint extract to a blender or food processor and blend until smooth, adding the non-dairy milk, if necessary to help blend.
  • Add the chocolate chips and pulse to incorporate then transfer to a bowl OR spoon the mixture into a bowl and sprinkle the chocolate chips on top. Enjoy!
