Ingredients

  • 6 Medium Russet Potatoes
  • Toppings: Coconut Bacon, Vegan Sour Cream, Chives, etc.

Coconut Bacon

  • 1 Cup Flaked Coconut
  • 2 Tablespoons Liquid Aminos
  • 1 Tablespoons Maple Syrup
  • 1 Teaspoon Liquid Smoke

Instructions

  • If using, prepare the coconut bacon.
  • Preheat the oven to 450°F.
  • Cut the potatoes into thin slices, leaving ¼ of the potato intact at the bottom.
  • Arrange the potatoes on a baking sheet and bake for 45-50 minutes, until the skins of the potatoes are starting to brown.
  • Remove from the oven, serve and enjoy! Best served warm.
