1PoundSpaghetti or Linguine Pastagluten-free if necessary
1PoundSliced Mushrooms
1PoundRaw Spinach
8ClovesGarlicchopped
¼CupVegetable Brothfor cooking
Salt, Pepper, & Red Pepper Flakesto taste
Instructions
Cook the pasta according to the package directions.
Meanwhile, heat a few tablespoons of vegetable broth in a large sauté pan. Add the mushrooms and cover for 3 minutes, until the mushrooms are tender. Add the spinach and garlic. Cover again for 1-2 minutes, until the spinach is just wilted. If at any point the vegetables start to stick, add more broth as necessary.
When the pasta is cooked, drain. Add combine the pasta and spinach-mushroom mixture. Sprinkle with salt, pepper, and red pepper flakes. Enjoy!
