Ingredients
1LargeYellow Onionthinly sliced
6ClovesGarlicminced
1PoundPasta of choice
1 ½TeaspoonsSalt
½TeaspoonPepper
2 15OunceCans Fire Roasted Tomatoes
4CupsVegetable Broth
8OuncesNon-Dairy Cream Cheese
5OuncesFresh Spinach
Protein of choice - chickpeasvegan chicken, etc.
Instructions
Heat a large pot over medium heat. Add the onion and cook, stirring often for 3-5 minutes until soft. If the onion starts to stick, add a splash of water or vegetable broth. Add the garlic and cook 1 minute.
Add the pasta, salt, pepper, fire roasted tomatoes, and vegetable broth. Bring to a boil and cook for 7-9 minutes (or around 2 minutes less than the pasta package instructions).
Turn off the heat and stir in the cream cheese, spinach, and protein, until the spinach is wilted and cream cheese is evenly distributed. Enjoy!
