Ingredients

  • 1 Teaspoon Ground Flax
  • 2 Teaspoons Water
  • ¼ Cup Peanut Butter I used crunchy peanut butter
  • Cup Date Sugar
  • ½ Cup Oat Flour
  • Teaspoon Baking Soda
  • ¼ Teaspoon Nutmeg
  • ½ Teaspoon Vanilla
  • ½ Cup + 1 Tablespoon Steel Cut Oats
  • Cup Mashed Banana
  • ¼ Cup Chopped Peanuts

Instructions

  • Preheat the oven to 375. Line a baking sheet with parchment paper. Make a small flax egg: mix the ground flaxseed and water and let sit in the fridge for 5 minutes.
  • Add all the ingredients except the peanuts to a food processor. Process until combined. Pulse in the peanuts.
  • Scoop 2-tablespoon-sized balls of dough onto the parchment-lined pan. Flatten.
  • Bake 10-12 minutes. Let cool slightly on pan, then move to a cooling rack to let the cookies cool completely. Enjoy!
