1TeaspoonGround Flax
2TeaspoonsWater
¼CupPeanut ButterI used crunchy peanut butter
⅓CupDate Sugar
½CupOat Flour
⅛TeaspoonBaking Soda
¼TeaspoonNutmeg
½TeaspoonVanilla
½Cup+ 1 Tablespoon Steel Cut Oats
⅓CupMashed Banana
¼CupChopped Peanuts
Instructions
Preheat the oven to 375. Line a baking sheet with parchment paper. Make a small flax egg: mix the ground flaxseed and water and let sit in the fridge for 5 minutes.
Add all the ingredients except the peanuts to a food processor. Process until combined. Pulse in the peanuts.
Scoop 2-tablespoon-sized balls of dough onto the parchment-lined pan. Flatten.
Bake 10-12 minutes. Let cool slightly on pan, then move to a cooling rack to let the cookies cool completely. Enjoy!
