Ingredients

  • 10 Ounces Baked Sweet Potato skins removed
  • ½ Cup Date Sugar
  • ¼ Cup Crunchy Peanut Butter
  • 2 Tablespoons Date Syrup
  • 2 Tablespoons Ground Flax
  • 2 Teaspoons Vanilla Extract
  • ¾ Cup Peanut Powder
  • ½ Cup Oat Flour
  • 1 Tablespoon Baking Powder
  • 1 Teaspoon Salt decrease to ½ teaspoon if using salted peanut butter
  • ½ Teaspoon Cinnamon
  • 1-2 Tablespoons Chopped Peanuts for topping

Instructions

  • Preheat the oven to 350. Line a loaf pan with parchment paper.
  • In a medium bowl, mash the sweet potato.
  • Add the date sugar, peanut butter, date syrup, ground flax, and vanilla extract. Stir until combined.
  • Add the peanut powder, oat flour, baking powder, salt, and cinnamon. Mix well.
  • Spread the mixture into the prepared pan. Top with chopped peanuts, if desired.
  • Bake for 20 minutes, or until a toothpick inserted in the middle of the loaf comes out clean. Let cool 15 minutes. Enjoy!
