Ingredients

  • 4-5 Small Pita Breads gluten-free or regular OR 3 Cups Vegan Pita Chips
  • 1 15 Ounce Can Chickpeas drained & rinsed
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • ½ Teaspoon Paprika or Smoked Paprika
  • Cup Kalamata Olives
  • ¼ Cup Roasted Red Peppers
  • ¼ Cup Banana Peppers
  • ¼ Cup Sliced Cucumbers
  • ½ Cup Hummus
  • Tzatziki to serve

Instructions

  • Preheat the oven to 350°F.
  • In a medium bowl toss the chickpeas with the garlic powder, paprika, and salt.
  • Spread on a baking sheet and bake for 20-25 minutes, until crispy on the outside but soft on the inside.
  • Slice the pita bread into triangles. Place on a separate baking sheet and toast in the oven with the chickpeas for 8-10 minutes - watch for burning.
  • To assemble, place a bed of pitas down on a baking sheet or tray. Dollop the hummus onto the pitas, add the chickpeas, top with the olives, red peppers, banana peppers, and cucumbers. Drizzle with tzatziki. Enjoy!
