Ingredients

  • 1 ½ Cup Rolled Oats
  • 1 Cup Oat Flour
  • ¼ Teaspoon Salt
  • ¼ Cup Maple Syrup
  • ¼ Cup Tahini or Almond Butter
  • 3 Cups Sliced Strawberries
  • 1 Teaspoon Arrowroot Powder or Cornstarch
  • 1 Teaspoon Lemon Juice

Instructions

  • Preheat the oven to 350°F. Line an 8×8 baking pan with parchment paper.
  • In a medium bowl combine the oats, oat flour, and salt.
  • Add the maple syrup and tahini. Stir until a crumbly mixture forms.
  • Reserve a heaping ½ cup of the crumble. Then, press the crumble into the bottom of the parchment-lined pan.
  • In a separate bowl, mix the sliced strawberries with the arrowroot and lemon juice.
  • Spread the strawberries on top of the crust.
  • Top the strawberries with the reserved crumble.
  • Bake for 35-40 minutes until the top of the crumble is browned and the bars seem to hold together.
  • Remove from the oven and let cool completely. Cut into bars. Enjoy!
