1 ½CupRolled Oats
1CupOat Flour
¼TeaspoonSalt
¼CupMaple Syrup
¼CupTahini or Almond Butter
3CupsSliced Strawberries
1TeaspoonArrowroot Powder or Cornstarch
1TeaspoonLemon Juice
Instructions
Preheat the oven to 350°F. Line an 8×8 baking pan with parchment paper.
In a medium bowl combine the oats, oat flour, and salt.
Add the maple syrup and tahini. Stir until a crumbly mixture forms.
Reserve a heaping ½ cup of the crumble. Then, press the crumble into the bottom of the parchment-lined pan.
In a separate bowl, mix the sliced strawberries with the arrowroot and lemon juice.
Spread the strawberries on top of the crust.
Top the strawberries with the reserved crumble.
Bake for 35-40 minutes until the top of the crumble is browned and the bars seem to hold together.
Remove from the oven and let cool completely. Cut into bars. Enjoy!
