Ingredients

  • 1 Cup Rolled Oats gluten free, if necessary
  • Cup Canned Pumpkin
  • 2 Tablespoons Date Syrup
  • 1 Tablespoon Ground Flaxseed
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Pumpkin Pie Spice
  • 1 Teaspoon Vanilla Extract

Instructions

  • Preheat the oven to 350. Line a baking sheet with parchment paper. Make a flax egg: combine the flaxseed with 2 tablespoons of water and let sit in the fridge for 5 minutes.
  • In a medium bowl, combine all the ingredients. (Don't forget the flax egg from the fridge.)
  • Scoop tablespoon-sized balls of dough onto the baking sheet. Bake for 11 minutes. Enjoy!

Notes

These cookies will not spread much in the oven. If you want flat cookies, use the palm of your hand to flatten each cookie before baking.
