1CupWater
1CupSweetener of choicebrown sugar, maple syrup, agave, or equivalent sugar alternative*
In a saucepan combine the water, sugar, cinnamon, ginger, nutmeg, cloves, allspice, and peppercorns. Bring to a simmer and let cook for 10-15 minutes.
Remove from the heat and stir in the vanilla. Let cool completely - this is necessary to infuse the flavor!
Strain with a fine mesh strainer or cheese cloth.
If desired, whisk in the sweetened condensed oat milk for Starbucks style syrup.

*Sugar: any sugar or liquid/meltable sugar substitute will work. Maple syrup and brown sugar are fine as-is.
