½CupMaple Syrup
¼CupCornstarch
¼CupApple Cider Vinegar
3TablespoonsKetchup
2TablespoonsSoy Sauce, Tamari, or Liquid Aminos
2ClovesGarlicminced
1TeaspoonRed Pepper Flakes
1MediumYellow Onionsmall diced
1Red Bell Peppersmall diced

Instructions
Preheat the oven to 450°F. Line a baking sheet with parchment paper.
Rinse the cauliflower florets. Transfer to the prepared baking sheet and bake 25-30 minutes until starting to brown.
Meanwhile, make the sauce. In a small bowl, mix the maple syrup, apple cider vinegar, cornstarch, ketchup, liquid aminos, garlic, and red pepper flakes.
Heat a non-stick pan over medium heat. Add the onion and peppers and half of the sauce. Sauté, using the sauce as the cooking liquid, until the veggies are soft.
When the cauliflower is ready, add it to the pan along with the remaining sauce. Stir to coat. Serve over rice. Enjoy!
