Ingredients

  • 1 Cup Rolled Oats
  • ¾ Cup + 2 Tablespoons Oat Flour
  • 2 Teaspoons Beetroot Powder optional **for purple cookies, use maqui powder instead
  • 1 Teaspoon Cinnamon
  • ½ Teaspoon Baking Soda
  • ¼ Teaspoon Salt
  • ½ Cup Unsweetened Applesauce
  • Cup Neutral Nut Butter like almond or cashew
  • ¼ Cup Maple Syrup
  • 2 Tablespoons Non-Dairy Milk if not using beetroot powder, omit the milk
  • 1 Teaspoon Vanilla
  • ½ Cup Vegan Chocolate Chips I used UnReal candies for color

Instructions

  • Preheat the oven to 350°F. Line two cookie sheets with parchment paper.
  • In a medium bowl mix the rolled oats, oat flour, beetroot powder, cinnamon, baking soda, and salt. Set aside.
  • In a large bowl mix the applesauce, nut butter, maple syrup, non-dairy milk, and vanilla.
  • Add the dry mixture to the wet mixture and mix thoroughly.
  • Stir in the chocolate chips.
  • Scoop into 2-tablespoon portions and arrange on the cookie sheet. Use a wet hand to gently press the cookies flat.
  • Bake for 8-10 minutes. Let cool. Serve and enjoy!
