Ingredients

  • 3 Medium Zucchinis
  • 3 Tablespoons Ground Flaxseed + 6 Tablespoons Water
  • ½ Cup Breadcrumbs gluten-free, if necessary
  • 2 Tablespoons Nutritional Yeast
  • 1 Teaspoon Dried Rosemary OR Italian Seasoning
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • ¼ Teaspoon Pepper

Instructions

  • Preheat the air fryer or oven to 400°F.
  • In a medium bowl, prepare the flax egg by mixing the ground flaxseed and water. Let sit 5 minutes.
  • In another medium bowl mix the breadcrumbs, nutritional yeast, rosemary, garlic powder, salt, and pepper.
  • Cut the zucchinis in half widthwise, then slice into fries.
  • Working one by one, coat each piece of zucchini in the flax egg, then in the spices.
  • Arrange the fries in a single layer in your air fryer or on a baking sheet.
  • Cook for 15 minutes, or until crispy. Serve with my garlic parsley aioli. Enjoy!
