Vegan Buffalo Seitan Wings

These Vegan Buffalo Chicken Wings are the perfect vegan game day dish! Made with no-boil seitan chicken, pan-fried until crispy, then tossed in buffalo sauce.

Ingredients

  • 240 Grams Vital Wheat Gluten about 2 cups
  • 30 Grams Nutritional Yeast about ½ cup
  • 1 Tablespoon Poultry Seasoning
  • 1 Tablespoon Dried Basil
  • 1 Tablespoon Onion Powder
  • 1 Tablespoon Garlic Powder
  • ¼ Teaspoon Paprika
  • Teaspoon Chili Powder
  • 1 Cup Water
  • ¼ Cup Soy Sauce Tamari, or Liquid Aminos
  • 1 Tablespoon Ketchup
  • ½ Teaspoon Liquid Smoke
  • ¾ Cup Vegan Buffalo Sauce
  • 1-2 Tablespoons Extra Virgin Olive Oil optional

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl mix together the vital wheat gluten, nutritional yeast, poultry seasoning, basil, onion powder, garlic powder, paprika, and chili powder.
  • Add the water, soy sauce, ketchup, and liquid smoke. Mix, using a fork until mostly combined, then switch to your hands, to help the mixture form into a large ball.
  • Shape the mixture into a long log, 2 inches in diameter, and then use scissors or a sharp knife to cut the mixture into wing shapes. You can pinch one end of each wing to create a drumstick shape. Place on the parchment lined baking sheet. Bake for 25-30 minutes, until internal temperature reaches 165°F.
  • When the wings are out of the oven, heat the oil, if using, in a large skillet over medium high heat. Add half of the wings and cook for 3-5 minutes to brown. Toss in half the buffalo sauce to coat and let cook another 1-2 minutes. Remove from the pan and repeat with the other half of the wings and sauce. (You may need to do a few batches, depending on the size of your pan.)
  • Serve with celery, carrot sticks, crackers, and vegan ranch or blue cheese dressing.

Notes

Instead of pan-frying you can bake or air fry the wings: Toss in buffalo sauce and return to the oven for another 10-15 minutes. Or toss in the air fryer at 350°F for 5-10 minutes.
