Make the fries. Preheat the oven or air fryer to 400. Slice the potatoes into ½" sticks. Transfer to a large bowl and toss with the oil/broth, spices, and cornstarch. Arrange in a single layer on a baking sheet or in the air fryer and bake for 30 minutes or air fry 15 minutes, flipping halfway through.
Prepare the tofu meat. Meanwhile, heat the oil, if using, in a large skillet. Crumble the tofu into the pan and cook, stirring occasionally for 5-8 minutes, until golden brown. Add the soy sauce, liquid smoke, and spices, and stir to combine. Cook another 5-7 minutes until the liquid is totally absorbed. Remove from the heat.
Mix the burger sauce. In a small bowl whisk together all the burger sauce ingredients.
Assemble the bowls. Place a bed of lettuce in each bowl. Then top with the fries and tofu meat, tomatoes, pickles, and onion. Serve with a drizzle of the burger sauce.
