Ingredients

  • 1 Recipe Seitan Chicken or 6 servings of a chicken substitute
  • ½ Cup Teriyaki Sauce I used Soy Vay teriyaki sauce; you can try my homemade WFPB teriyaki sauce
  • 2 Bunches Broccolini
  • 1 Teaspoon Olive Oil optional
  • 4 ½ Cups Cooked White Rice
  • Sesame Seeds for garnish

Instructions

  • Heat a large skillet over medium heat. Add the seitan chicken and teriyaki sauce. Cook 5-7 minutes until warm and just starting to brown. **If you are using store-bought chicken, sauté the chicken according to the package instructions before adding the teriyaki sauce.
  • Meanwhile, heat the oil another large skillet over medium heat. Add the broccolini and cook or a few minutes to brown. Then add 3 tablespoons of water, cover and steam for 5 minutes, until soft.
  • Serve the chicken and broccoli over rice. Garnish with sesame seeds.
