Ingredients

  • 1 Recipe Vegan Seitan Chorizo
  • 1 Medium Yellow Onion diced
  • 1 Pound Penne Pasta
  • 1 Teaspoon Smoked Paprika can sub regular paprika
  • 1 Teaspoon Salt
  • Teaspoon Cayenne
  • 15 Ounce Can Fire Roasted Diced Tomatoes
  • 3 Cups Vegetable Broth or Water
  • 8 Ounces Vegan Cream Cheese
  • Chopped Fresh Scallions to serve

Instructions

  • Prepare the chorizo. If using my seitan chorizo, bake in the oven as directed. If using a store-bought chorizo, pan cook according to the package directions.
  • In a large/deep skillet (or pot if you don't have a large skillet), heat the onion over medium heat. Cook five minutes, until translucent.
  • Add the smoked paprika, salt, cayenne, and toss.
  • Add the broth, tomatoes, and pasta. Bring to boil and cook until pasta is al dente, according to the package directions.
  • Stir in the chicken and cream cheese. Toss well.
  • Serve topped with scallions.
