Ingredients

  • 2 Pounds Carrots peeled and sliced into sticks
  • 3 Cloves Garlic minced
  • ¼ Cup + 2 Tablespoons Maple Syrup divided
  • 1 Tablespoon Vegetable Broth
  • ½ Teaspoon Salt
  • ¼ Teaspoon Pepper
  • Fresh Thyme for garnish

Instructions

  • Preheat the oven to 400°F.
  • In a large bowl, toss the carrots, garlic, ¼ cup of maple syrup, vegetable broth, salt, and pepper.
  • Transfer the mixture to a casserole dish or baking sheet lined with parchment paper.
  • Bake for 50-60 minutes, stirring every 20 minutes.
  • Remove from the oven and toss with the remaining two tablespoons of maple syrup.
  • Serve with a garnish of fresh thyme.
