Vegan Gluten Free Birds Nest Cookies

This vegan and gluten-free version of birds nest cookies is a quick, easy, and festive treat for Easter. These colorful no-bake cookies will be a hit this Easter.

Ingredients

  • 3 Cups Gluten Free Pretzels
  • ¾ Cup Vegan Chocolate Chips
  • 1 Tablespoon Peanut Butter
  • 42 Vegan Candy Coated Peanuts, Vegan Candy Coated Chocolates, or Blueberries (I used the UnReal brand vegan candy coated peanuts)

Instructions

  • Use your hands to crush the pretzels into small pieces. (Avoid using a food processor because this will create a powder instead of pieces.)
  • In a microwave safe bowl, melt the chocolate on 50% power, stirring every 30 seconds until completely melted and smooth.
  • In a large bowl add the crushed pretzels, melted chocolate, and peanut butter. Mix well.
  • Use a cookie scoop or ¼ cup measure to portion the pretzels into scant ¼ cup sized bunches. Place on a parchment lined baking sheet. Top each nest with three candies in a nest shape.
  • Freeze or refrigerate for 10-15 minutes until the chocolate is set.
