Ingredients

  • 1 Head Kale finely chopped
  • 2 Apples diced
  • ¼ Cup Plant-Based Mayonnaise I used my WFPB Mayo
  • 1 Tablespoon Maple Syrup
  • 1 Tablespoon Dijon Mustard
  • ½ Teaspoon Salt
  • ¼ Teaspoon Pepper

Instructions

  • In a small bowl, whisk the mayo, maple syrup, Dijon, salt, and pepper.
  • Place the kale in a large bowl and pour on the dressing. Massage the kale using your hands for several minutes until the kale is soft and slightly wilted.
  • Toss in the apples. Serve immediately.
