Ingredients

  • 2 Teaspoons Soy Sauce, Tamari, or Liquid Aminos
  • ½ Small Yellow Onion diced
  • 3 Cloves Garlic minced
  • 8 Ounces Mushrooms I used a mixture of shiitakes and white button mushrooms
  • 2 Slices Sourdough Bread or bread of choice
  • ½ Cup Oil-Free Hummus
  • Microgreens for garnish

Instructions

  • In a medium non-stick pan, sauté the onion until soft, using the soy sauce as the cooking liquid.
  • Add the garlic and stir 30 seconds.
  • Add the mushrooms and cook 5-7 minutes, until soft.
  • Meanwhile, toast the bread.
  • Spread a layer of hummus on the toast, add the mushroom mixture, and top with microgreens. Enjoy immediately!
