Ingredients
⅔CupUnsweetened Peanut Butter
½CupDate Sugar
1TablespoonGround Flaxseeds
2TeaspoonsVanilla Extract
½ + ⅓ CupOat Flour
½CupUnsweetened Peanut Powder
½TeaspoonBaking Soda
½TeaspoonSalt
¼CupUnsweetened Applesauceif you need it
2OuncesVegan Dark Chocolate
Instructions
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a large bowl, mix the peanut butter, date sugar, flaxseeds, and vanilla extract until combined.
Add the oat flour, peanut powder, baking soda, and salt. Mix the dough, using your hands if necessary. If the dough is too dry, add the applesauce 1 Tablespoon at a time, until you can easily form a ball.
Drop tablespoons of dough onto the prepared baking sheet. Then flatten the cookies with the palm of your hand (they won't spread during baking).
Bake for 8 minutes.
While the cookies are baking, melt your chocolate in the microwave on 50% power. Stir the chocolate every 30 seconds.
Once the cookies are baked, decorate them with the chocolate however you'd like. Enjoy!
RECIPE NOTES
If your peanut butter already contains salt, add ¼ teaspoon of salt instead of ½ teaspoon.
