Ingredients

  • Cup Unsweetened Peanut Butter
  • ½ Cup Date Sugar
  • 1 Tablespoon Ground Flaxseeds
  • 2 Teaspoons Vanilla Extract
  • ½ + ⅓ Cup Oat Flour
  • ½ Cup Unsweetened Peanut Powder
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • ¼ Cup Unsweetened Applesauce if you need it
  • 2 Ounces Vegan Dark Chocolate

Instructions

  • Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  • In a large bowl, mix the peanut butter, date sugar, flaxseeds, and vanilla extract until combined.
  • Add the oat flour, peanut powder, baking soda, and salt. Mix the dough, using your hands if necessary. If the dough is too dry, add the applesauce 1 Tablespoon at a time, until you can easily form a ball.
  • Drop tablespoons of dough onto the prepared baking sheet. Then flatten the cookies with the palm of your hand (they won't spread during baking).
  • Bake for 8 minutes.
  • While the cookies are baking, melt your chocolate in the microwave on 50% power. Stir the chocolate every 30 seconds.
  • Once the cookies are baked, decorate them with the chocolate however you'd like. Enjoy!
  • RECIPE NOTES
  • If your peanut butter already contains salt, add ¼ teaspoon of salt instead of ½ teaspoon.
