Instructions
Make the seitan steaks (or prepare vegan steaks of choice according to the package instructions). When cool enough to handle, slice the seitan steaks into strips.
In a small bowl, whisk together the dressing ingredients.
Assemble the salad. On a large platter plate the mixed greens, followed by the onion, tomatoes, and cucumber. Add the sliced steaks. Then sprinkle with the feta and sunflower seeds, if using. Drizzle with dressing.
