Ingredients

  • 1 Recipe Seitan Steak or store-bought vegan steak, like beyond steaks
  • 6-8 Cups Mixed Greens
  • 1 Small Red Onion sliced
  • 1 Pint Grape or Cherry Tomatoes halved
  • 1 Medium English Cucumber sliced
  • ½ Cup Vegan Feta optional
  • Cup Sunflower Seeds or pepitas or other nuts; optional

Dressing

  • 3 Tablespoons Water
  • 3 Tablespoons Dijon Mustard
  • 3 Tablespoons Maple Syrup
  • 1 Tablespoon Lemon Juice
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper

Instructions

  • Make the seitan steaks (or prepare vegan steaks of choice according to the package instructions). When cool enough to handle, slice the seitan steaks into strips.
  • In a small bowl, whisk together the dressing ingredients.
  • Assemble the salad. On a large platter plate the mixed greens, followed by the onion, tomatoes, and cucumber. Add the sliced steaks. Then sprinkle with the feta and sunflower seeds, if using. Drizzle with dressing.

Notes

Store leftovers in an airtight container for up to a week in the fridge. For best results, dress only the portion of salad you plan to eat and store the remaining dressing separately.
