Sweet and creamy, this Easy Homemade Coconut Milk is super simple to whip up. Enjoy it with cereal, in coffee, or however you drink milk!

Are you a big milk drinker? If you're anything like me, you drink milk ALL THE TIME (non-dairy milk, of course). I pour milk in my turmeric lattes, use it when I make oatmeal, add it to nice cream, or just drink it by the glass! It's delicious!!
I used to go through carton after carton of almond or flax milk each week. But I recently found out that I might be intolerant to the chemicals and additives that milk manufacturers add to their plant milks. Yikes!
The additives in store-bought milk make my stomach hurt but I didn't want to give up drinking milk altogether. So what's a girl to do?! Make her own milk of course!

I've experimented with almond milk and oat milk in the past, but honestly, I found them frustrating and messy. You have to soak the almonds or oats, drain them, blend them, strain them, clean the nut milk bag, ... too many steps. I needed something sustainable. Something that I could make regularly and easily. Then I had an idea: coconut milk!
You can buy coconut milk in a can. If you buy the right brand it has no additives. If you want, you could just drink the coconut milk from the can. It's delicious! But it's pretty high in fat. Now don't get me wrong, I 100% support eating healthy fats. But I drink milk so often that I wanted something lighter that wouldn't be super filling when I drink it multiple times a day. So I decided to mix it with some water to create a lighter version.
Yes, you just read that correctly. All you need to do to make this Easy Homemade Coconut Milk is to mix it with water. (That's why it's called easy.)
I almost feel guilty about sharing such a simple recipe. I mean it doesn't get much more basic than mixing coconut milk and water. But it's too delicious not to share. And it has NO added chemicals. The ingredients are literally coconut and water. That's it. No terrible ingredients that will upset your digestive system. No chemicals. Just real ingredients.

How to Use Easy Homemade Coconut Milk
This Coconut Milk has a deliciously sweet flavor that works perfectly in so many recipes.
How can you use homemade coconut milk? Exactly how you would use any store bought plant-based milk: with cookies, in nice cream cake, as a coffee creamer, in soup, with oats. You name it!

Wow, awesome!
Just found your website when I was searching, "how much water to add to canned coconut" I'm a believer, too.
New fan to you website, can't wait to check it out.

How long does this last in the fridge if I were to triple or quadruple the recipe?
Elizabeth
Hi! This will last up to two weeks in the fridge. You can freeze it if you would like it to last longer - it can last 6 months or more in the freezer. Then just pull it out and defrost when you're ready to use.

I tried making coconut milk today and it’s not blending very well. There is a large amount of fluffy thick coconut on top. How do I get that to incorporate better?
I look forward to trying some of your other recipes.
Elizabeth
Hi Sherri - this can happen sometimes depending on the brand of coconut milk, how old it is, etc. A few options: 1) heat the coconut milk on the stove or in the microwave first, and stir all the cream and liquid together before mixing with the water, 2) use a blender or food processor instead, to really puree the mixture, 3) skim off those solids and discard. Hope this helps!

I like the simplicity of this recipe but I thought the recipe was actually making the coconut milk from a real coconut. That's what I was looking for. Your recipe is a great quick alternative.

Totally understand! I do have a recipe using coconut flakes to blend into milk - Vanilla Sea Salt Coconut Milk. But nothing with a real coconut (yet)
