    Oatmeal Raisin Cookie Bites

    Oatmeal Raisin Cookie Bites are cute, bite-sized balls of deliciousness. These low-calorie, plant-based, sugar-free, gluten-free treats are perfect for an every day snack!

    Nothing gives off fall vibes more than warm cookies. Except maybe pumpkin recipes, coming soon! I definitely enjoy a nice hearty cookie now and then, but when I want a cookie on a random Thursday, I'm not about to whip up a super decadent recipe. (If you ARE looking for some decadence, check out these cookie sandwiches.)

    I would, however, make a batch of these Oatmeal Raisin Cookie Bites. They're basically like oatmeal raisin cookies, but they're bite-sized and super cute. Also, they are healthy!

    Oatmeal Raisin Cookie Bites

    Ingredients

    Oatmeal raisin cookies already have the reputation of health. Though, traditional oatmeal cookie recipes often have just as much butter and sugar as other cookie recipes. Yikes, I don't want any of that in my body. These cookie bites ARE definitely the healthy kind. They only have a few whole-food ingredients.

    • Rolled Oats:  Y'all know I love oats a lot so they're definitely a staple in many of my recipes but of course oatmeal raisin cookies aren't oatmeal raisin without the oats.
    • Oat Flour: Oats do a great job for the texture in these bites, but we do need some oat flour to help bind these cookies together and create a more cookie-like texture.
    • Ground Flaxseed: Flaxseeds are high in omega-3s and serve as a replacement for eggs. They, like the oat flour, help bind these cookies together.
    • Baking Powder: Baking powder creates air bubbles in the cookies and gives them some rise.
    • Spices: I think most oatmeal raisin cookies have cinnamon, but we're also adding nutmeg for an extra kick of fall flavor!
    • Date Paste: Normally, my baking recipes use date syrup, but I didn't have any on hand when I made these cookies, so I used blended dates instead and it worked so well! All I did was put some dates in my food processor and blend them until they formed a thick ball. The dates add sweetness without all the moisture of date syrup.
    • Almond Butter: It helps to have some fat in baking recipes or else the texture ends up too dense. You can use any neutral flavored nut butter here, like cashew butter or walnut butter.
    • Molasses: Molasses has such an intense flavor. To me, it tastes like fall in liquid form. It's pretty sweet but with a slightly bitter flavor that adds such a depth to these cookies. Yum!
    • Banana: We do need a bit more moisture in these cookies. Banana does the trick. If you're not a banana fan, you could sub some applesauce or other fruit puree.
    • Vanilla Extract: For delicious hints of vanilla.
    • Raisins: Yes, Oatmeal Raisin Cookie Bites do indeed have raisins.

    How to make Oatmeal Raisin Cookie Bites

    To make these cookie bites, start by making sure you have some date paste. Blend approximately 6 Medjool dates in a food processor until a ball forms. You can then measure out the ¼ cup you need for this recipe.

    Start by mixing the dry ingredients together. Then, in a separate bowl, mix the wet ingredients. Add the dry to the wet. Then, stir in the raisins.

    Scoop tablespoon-sized balls onto a parchment-lined baking sheet. Bake for 14 minutes. Then, remove from the oven. Enjoy these fun fall treats!

    Equipment

    • Food Processor

    Ingredients

    • 1 Cup Rolled Oats
    • ¼ Cup Oat Flour
    • 1 Tablespoon Ground Flaxseed
    • ½ Teaspoon Baking Powder
    • ½ Teaspoon Cinnamon
    • ½ Teaspoon Nutmeg
    • ¼ Teaspoon Salt
    • ¼ Cup Thick Date Paste see recipe
    • 2 Tablespoons Almond Butter
    • 1 Tablespoon Molasses
    • ⅓ Medium Banana 2 ounces
    • ½ Teaspoon Vanilla Extract
    • ⅓ Cup Raisins

    Instructions

    • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
    • Make thick date paste. Blend very soft medjool dates in a food processor until they form a ball. Measure out ¼ cup.
    • In a small bowl mix the rolled oats, oat flour, baking powder, cinnamon, and nutmeg. Set aside.
    • In a medium bowl, stir together the date paste, almond butter, molasses, banana, and vanilla extract. Pour the dry ingredients into the wet and mix until combined. (I recommend using your hands.) Stir in the raisins.
    • Scoop out tablespoon-sized balls and line on the baking sheet. Bake for 14 minutes. Let cool. Enjoy!
