Oil-Free Vegan Air Fryer Baked Apples are an easy, healthy dessert. Made with only a few whole food plant-based ingredients, you can whip up this dish in just 25 minutes!

I have to say, I know that eating fruit is healthy, but it's not always my first choice for dessert. Like, if I can have a healthy brownie, why would I just eat a piece of fruit?

Usually, I end up sneaking fruits and veggies into my desserts. All my brownie recipes use sweet potatoes. And lots of my ice cream recipes use bananas.

But there's something different about having actual fruit for dessert. These baked apples make me actually want to eat fruit for dessert. They are sweet and have spices like cinnamon and nutmeg for extra flavor. Plus pecans and currants for some delicious texture.

I also love that these are air fryer baked apples. No need to heat up the oven. The air fryer blasts these guys and (with a little trick) they end up soft and sweet in no time.

    Ingredient Notes

    • Apples: choose your favorite variety. I used Galas because I prefer sweeter apples
    • Pecans: use raw, unsalted pecans. You could sub another nut like walnuts or almonds.
    • Currants: currants have such a unique taste, I prefer them to raisins in this dish, but raisins would work as a substitute for currants
    • Maple Syrup: for a completely fruit-sweetened dessert, use date syrup instead
    • Nut Butter: I used my mixed nut butter, but any neutral tasting nut butter like almond butter or cashew butter would be perfect
    • Lemon Juice
    • Spices: cinnamon, nutmeg, salt
    • Boiling Water: don't skip this! It helps to cook the apples. Without the water the apples would burn before they cook fully

How to make Oil-Free Vegan Air Fryer Baked Apples

Step 1. Preheat the air fryer to 350°F.

Step 2. Cut the top off of the apple. Use a knife to scoop out the core.

Step 3. In a small bowl mix the pecans, currants, maple syrup, nut butter, lemon juice, cinnamon, nutmeg, and salt.

Step 4. Place the apples in the dish for your air fryer (or baking dish for the oven). Spoon the mixture into the crevice of each apple. Pour the boiling water into the bottom of the dish.

Step 5. Bake for 15 minutes. Serve and enjoy!

    Oven Instructions

Follow the same directions for the air fryer, except bake the apples for an extra 5-10 minutes.
