- Spices: smoked paprika, onion powder, garlic powder, oregano, cumin, chili powder, black pepper. Don't skip that smoked paprika - it's the key to all the flavor here.
- Water: water helps create the right texture
- Soy Sauce, Tamari, or Liquid Aminos: for saltiness. I used soy sauce, but any of these three will work.
- Red Wine Vinegar: a bite of acid helps deepen the overall flavor. Feel free to use apple cider vinegar as a sub.

Step-By-Step Instructions
Step 1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Step 2. In a large bowl mix all the dry ingredients.

Step 3. Pour in the water, soy sauce, and red wine vinegar. Mix using a fork until crumbles start to form. Do not over mix - the more you mix the more the mixture will clump together.

Step 4. Place on the prepared baking sheet and break up any large chunks.

Step 5. Bake 25-30 minutes until an internal temperature of 195°F is reached.

Step 6. Let cool slightly. Then chop or tear any large pieces into ground chorizo sized pieces. Use in your favorite recipe!
