    Easy Vegan Sweet Potato Brownies

    These Easy Vegan Sweet Potato Brownies are a rich, chocolate-y. Made with only a few whole food plant-based ingredients, whip these up whenever you're craving some deliciousness. They're also gluten-free!

    You'd never guess the secret ingredient to these brownies if it wasn't right in the name. Whoops. It's sweet potatoes!!

    Sweet potatoes add sweet flavor and texture while serving as a binding agent in these brownies. Don't worry though, the brownies are sweet, but they DON'T taste like sweet potatoes.

    Instead, they taste like a chocolate dream. Yum. They are rich and fudgy without being gluey. Yet they still have a bit of a crumbly texture and a nice crisp edge (for my fellow edge-lovers!)

    Why I love these Easy Vegan Sweet Potato Brownies

    • Dietary needs - this recipe is plant-based, oil-free, gluten-free, and sugar-free
    • Perfect easy dessert - these brownies are pretty simple. Whip them up anytime for a tasty crowd pleaser
    • Secretly healthy - with sweet potatoes, almond flower, and date sugar these brownies are definitely healthy but they taste so good that no one will guess this recipe is full of good-for-you ingredients

    Ingredient Notes

    • ‍Almond Butter: many brownie recipes use oil or butter as a fat source, but these brownies use almond butter because of almonds' extreme nutrient density and health benefits. You'll definitely want to use delicious and creamy Homemade Almond Butter for this recipe.
    • ‍Sweet Potato: steamed sweet potato is best, and easiest. See steaming instructions below. Be sure to remove the skin of the potato before you add it to the recipe - but save the skins! They have tons of fiber and are so good for you!!
    • ‍Date Sugar: my go-to dry sweetener. Date sugar is made from dried dates that have been ground into a powder. Since it's made from dates, date sugar contains fiber which doesn't spike your blood sugar like other sweeteners do.
    • ‍Cocoa Powder: look for an unsweetened cocoa powder.
    • ‍Almond Flour: otherwise known as almond meal, almond flour gives Sweet Potato Brownies the perfect texture. Not too cakey, but not so fudgy that they never bake.
    • ‍Buckwheat Flour: despite the name, buckwheat flour doesn't actually have wheat and is 100% gluten-free. It adds a slightly nutty flavor to the brownies and cuts down on some of the fat that the brownies would have if we made them with only almond flour.
    • Baking Powder
    • Baking Soda
    • Salt
    • Vegan Chocolate Chips: these are optional, but it's always nice to have a bit more chocolate! Look for a vegan/allergy-friendly brand. Or use 100% unsweetened chocolate.

    How to Steam a Sweet Potato

    Step 1. Fill a pot with water and bring it to a boil.

    Step 2. Poke a few holes in the sweet potato using a fork. Alternatively, chop the sweet potato into cubes.

    Step 3. Put the sweet potato in a steamer basket, colander, or other gadget with holes. Place the basket on top of the boiling water without letting it touch the water. Cover.

    Step 4. Let the sweet potato cook for 15-30 minutes, until it is fork tender. The exact cook time will depend on the size of the potato or how small you've cut it.

    Step 5. When the sweet potato is tender, remove it from the heat and let cool.

    How to make Easy Vegan Sweet Potato Brownies

    Step 1. Preheat the oven to 350°F. Line the bottom and sides of a brownie pan with parchment paper.

    Step 2. In a medium bowl, mash the sweet potato.

    Step 3. Mix in the almond butter and date sugar.

    Step 4. Add the dry ingredients: cocoa powder, almond flour, buckwheat flour, baking powder, baking soda, and salt.

    Step 5. Stir in the chocolate chips.

    Step 6. Press into the prepared pan and bake for 20 minutes. Let cool in the pan for 15 minutes before cutting. Enjoy!

    • ⅔ Cup Almond Butter
    • 150 Grams Steamed Sweet Potato skins removed
    • ¾ Cup Date Sugar
    • ½ Cup Unsweetened Cocoa Powder
    • ¼ Cup Almond Flour
    • ¼ Cup Buckwheat Flour
    • ½ Teaspoon Baking Powder
    • ½ Teaspoon Baking Soda
    • ½ Teaspoon Salt
    • ⅓ Cup Chocolate Chips optional

    Instructions
