Why I love this Teriyaki Mushroom Tempeh Salad
- Dietary needs - this salad is dairy-free, plant-based, oil-free, gluten-free, and sugar-free
- High protein - tempeh is fermented soy beans, meaning it's packed with protein. Plus, there's a surprising amount of protein in both spinach and mushrooms. A serving of this salad has more than 20 grams of protein
- Not all raw - sometimes raw salad is hard to digest, or you just don't want so much crunch. This salad has the crisp of fresh spinach and the teriyaki mixture to add softness to the salad
- Delicious mushroom tempeh teriyaki - honestly, the teriyaki part is so good you could just eat tempeh teriyaki by itself. But of course, keep those greens for extra nutrients

Ingredient Notes & Substitutions
- Tempeh: tempeh is a block of fermented soy beans - it's high in protein and gut friendly! You can find it in the refrigerated section of the grocery store
- Mushrooms: use your favorite kind of mushroom
- Red Onion: or yellow or white onions
- Spinach: use raw baby spinach. You could also replace the spinach with your favorite green - the darker it is the more nutrients it has!
Teriyaki Sauce
- Liquid Aminos: you can sub tamari for another gluten free alternative or just use soy sauce if you aren't concerned about gf
- Water
- Date Syrup: you can also use maple syrup
- Arrowroot Powder: you can also use cornstarch
- Garlic Powder: you could also use fresh minced garlic
- Ground Ginger: you could also use fresh ginger

How to make Mushroom Teriyaki Tempeh Salad
Step 1. Make the teriyaki sauce by whisking the liquid aminos, water, date syrup, garlic powder, ginger, and arrowroot.
Step 2. In a non-stick pan, heat ¼ cup of the of teriyaki sauce over medium heat. Add the tempeh, onion, and mushrooms and cook until the onion is translucent and the mushrooms are soft (5-7 minutes). Add more sauce when the mixture starts to stick and reserve any remaining sauce to use as dressing (I had about ¼ cup left).
Step 3. To serve, place a bed of spinach on a plate or bowl and top with the teriyaki mixture. Drizzle on extra teriyaki sauce as dressing. Enjoy!
If you do not want to serve all servings at once, refrigerate the teriyaki mushroom tempeh mixture - this salad tastes great cold!

- ⅓ Cup Water
- 2 Tablespoons Date Syrup
- 2 Teaspoons Arrowroot Powder or Cornstarch
- 1 Teaspoon Garlic Powder

- 1 8 Ounce Block Tempeh crumbled
- 8 Ounces Sliced Mushrooms like cremini or button
- ½ Large Red Onion diced
- 8 Cups Spinach
