This Teriyaki Tofu Bowl is a simple meal of tofu and broccoli in a quick homemade teriyaki sauce. These Broccoli Tofu Bowls take only 25 minutes to make and are completely vegan, gluten-free, and oil-free!

I'm always looking for light, yet filling dinners. Especially during the summer, I don't want to eat a bunch of heavy meals. Plus, I want to make sure I give my stomach enough time to fully digest my food so I can sleep well. A dinner on the light side is just what I need. Enter: these Teriyaki Tofu Bowls.

It's basically exactly what it sounds like. Broccoli and tofu in a delicious teriyaki sauce. Served over rice. With some green onions and sesame seeds for topping.
This bowl is super simple to make, too. Don't be afraid of tofu if you've never cooked it before. It's not hard at all!

Why I love this Teriyaki Tofu Bowl
- Dietary needs - these broccoli tofu bowls are dairy-free, plant-based, oil-free, gluten-free, and sugar-free
- High protein - tofu is made of soy beans, meaning it's packed with protein. Plus, there's a surprising amount of protein in broccoli. A serving of these teriyaki tofu bowls has around 18 grams of protein
- Delicious teriyaki - the sweet, salty, fresh gingery taste of teriyaki is delicious!

Ingredient Notes
- Extra Firm Tofu: be sure to buy extra firm tofu - any lighter and the tofu will fall apart. For recipes like this, where the tofu is the star, I recommend a high-protein tofu, since they tend to be even firmer than standard extra-firm
- Broccoli: I used fresh broccoli, but you could also make this recipe with frozen broccoli to cut down on prep time
- To Serve: white rice, green onions, sesame seeds
Teriyaki Sauce Ingredients
- Liquid Aminos, Tamari, or Soy Sauce: any of the three will work. If you need a gluten-free option, be sure to use liquid aminos or tamari.
- Water
- Date or Maple Syrup: I used date syrup, to keep this recipe completely fruit-sweetened.
- Arrowroot Powder or Cornstarch: this creates a thickness in the sauce
- Spices: garlic, black pepper, ginger

How to make Teriyaki Tofu Rice Bowls
Step 1. Make the teriyaki sauce by whisking the liquid aminos, water, date syrup, arrowroot, garlic, pepper, and ginger.

Step 2. Cube the tofu.

Step 3. In a large skillet, heat ¼ cup of the of teriyaki sauce over medium-high. Add the tofu and cook 5-7 minutes - stir occasionally, allow the tofu to brown a minute or two on each side.

Step 4. Add the broccoli and remaining ¼ cup of teriyaki sauce. Turn the heat to medium, cover and cook 3-5 minutes until the broccoli is tender.

Step 5. Serve over a bed of rice with a garnish of sliced scallions and sesame seeds.

- 1 14 Ounce Block Extra Firm Tofu
- 3 Heads Broccoli cut into florets
- To Serve: white rice, green onions, sesame seeds
Teriyaki Sauce
- ¼ Cup Liquid Aminos, Tamari, or Soy Sauce
- ¼ Cup Water
- 2 Tablespoons Date or Maple Syrup
- 2 Teaspoons Arrowroot Powder or Cornstarch
- 3 Cloves Minced Garlic
- ½ Teaspoon Black Pepper
- ¼ Teaspoon Ground Ginger
