Packed with protein and fiber, this Vegan Red Lentil Curry is a quick and EASY weeknight dinner recipe. Red Lentil Curry is packed full of so much flavor, you'd never realize that it's so easy to make.

Curries are one of my favorite dinner recipes because they are so easy. There are various ways to cook curries, but my method requires just a few minutes and very minimal ingredients. Yet the flavor is still there!
And it's really easy to fill your plate with vegetables, protein, and fiber - because almost everything tastes good in a curry.
You can easily create a complete meal that is flavorful and healthy in 30 minutes!

Why I love this Vegan Red Lentil Curry
- Dietary needs - this recipe is dairy-free, plant-based, oil-free, gluten-free, and sugar-free. It's also very high in protein and fiber.
- Quick and easy - this curry comes together in about 40 minutes, perfect for weeknight dinner
- Hearty, healthy dinner - lentils and cauliflower are both super healthy foods, serve with rice for a delicious dish

Ingredient Notes
- Vegetable Stock: I like to use stock instead of water to create a more flavorful curry. If you don't have vegetable broth or stock, you can use water.
- Yellow Onion: you can also use a white or red onion if you want
- Garlic
- Ginger: fresh ginger is ideal for that bite of ginger flavor. But if you don't have fresh, a bit of dried ginger will work just fine
- Curry Powder & Turmeric Powder: these spices give the curry all its flavor!
- Salt & Pepper
- Red Lentils: I don't recommend subbing a different type of lentil in this recipe - red lentils cook faster than brown or green lentils, so you might run into difficulties if you don't use red
- Cauliflower: be sure to chop the broccoli into small, bite-sized pieces.
- Coconut Milk: This is the canned coconut milk, not the stuff you buy from a carton. The canned milk is much thicker and creamier. This is the key ingredient for the deliciously rich flavor of this curry.
- To serve: cooked white rice, pita bread, lime wedges, fresh cilantro

How to make Vegan Red Lentil Curry
Step 1. Using a few tablespoons of vegetable broth, sauté the onion in a large saucepan over medium-high heat until soft. Add more vegetable broth if the onion starts to stick.

Step 2. Add the garlic, ginger, turmeric, curry powder, salt, and pepper. Cook 30 seconds.

Step 3. Add the lentils, cauliflower, coconut milk, and remaining vegetable stock. Bring to a simmer and cook for 20 minutes, until the lentils and cauliflower are soft.

Step 4. Remove the curry from the heat and serve. Garnish with fresh cilantro and a drizzle of lime juice. Enjoy!

Vegan Red Lentil Curry
Ingredients
- 4 Cups Vegetable Stock divided
- 1 Large Yellow Onion finely chopped
- 4 Cloves Minced Garlic
- 2 Teaspoons Minced/Grated Ginger or ½ teaspoon Dried Ginger
- 1 Teaspoon Turmeric Powder
- 1 Teaspoon Curry Powder
- 1 Teaspoon Salt
- ½ Teaspoon Pepper
- 1 Pound Red Lentils
- 1 Head Cauliflower cut into small florets (optional)
- ½ Cup Coconut Milk from the can
- To serve: cooked white rice, pita bread, lime wedges, fresh cilantro
