Sweet potato casserole is just an excuse to eat dessert at dinner. I mean, if you think about it, sweet potato casserole is the slightly healthier version of sweet potato pie.
The sweet potatoes are naturally sweet, and you add some maple syrup to make it even sweeter. So the dish ends up tasting like dessert. But I'm not mad. This vegan sweet potato casserole is delicious.
It's made with whole food plant-based ingredients like sweet potatoes, nut butter, maple syrup, and spices. And this gluten-free sweet potato casserole is topped with a simple pecan topping.

- Sweet Potatoes: usually I recommend leaving the skins of your potatoes on for extra fiber, but since we want a smooth casserole filling, we'll peel the potatoes first
- Maple Syrup: some extra sweetness helps create that almost dessert-like taste. You can also use date syrup for a completely fruit-sweetened casserole.
- Nut Butter: some nut butter like cashew butter or almond butter adds some nuttiness and helps create a deeper flavor
- Vanilla Extract
- Spices: salt, cinnamon, nutmeg

Topping Ingredients
- Pecans: chopped pecans create a nutty topping that pairs perfectly with the sweet potatoes
- Maple Syrup: you can also use date syrup
- Kosher Salt

How to make Vegan Sweet Potato Casserole without Marshmallows
Step 1. Steam the sweet potato until fork-tender. Let cool slightly.

Step 2. Transfer the potatoes to a large bowl and mash thoroughly.

Step 3. Stir in the maple syrup, nut butter, vanilla, salt, cinnamon, and nutmeg.

Step 4. Spread the potato mixture into a casserole dish (I used this dish). Sprinkle the chopped pecans in an even layer onto the sweet potatoes. Drizzle evenly with maple syrup, then sprinkle with the salt.

Step 5. Bake at 350°F for 25-30 minutes. Let cool slightly, then serve and enjoy!
