What is white chicken chili?
White chicken chili is a version of chili that uses chicken instead of beef and doesn't use tomatoes. Hence the word white in the title.
Usually it features chicken, white beans, and a broth that's made creamy from yogurt or sour cream. The chili also typically has poblano peppers or another spicy green pepper. And fresh cilantro.
The chili is made from white-ish ingredients, yet still has a normal chili texture and flavor.
This vegan version of white chicken chili uses seitan chicken instead of regular chicken. And swaps in non-dairy yogurt for regular yogurt.

Ingredient Notes & Substitutions
- Yellow Onion: you can also use a red or white onion
- Poblano Peppers: poblano peppers are a mildly spicy pepper. They can vary in spice level, so the chili may end up with a slightly different spice each time you make it. If you can't find poblanos, use regular green bell peppers and add a bit more chili powder to taste
- Garlic
- Cumin & Chili Powder: cumin adds a nutty flavor and chili powder adds a bit of spice
- Salt
- Vegetable Broth: look for a brand of vegetable broth with no added sugar
- Seitan Chicken: I used my vegan seitan chicken recipe because it is packed with protein and has a great chicken-like texture. However, seitan is not gluten-free, so if you are gluten-free, you'll need another protein option like Abbot's Butcher chick'n.
- White Beans: I used cannellini beans, but any white bean will work
- Non-Dairy Yogurt: I like Kite Hill's Greek-style yogurt
- Lime Juice: white chicken chili traditionally has a kick of lime juice for some acid
- Cilantro: cilantro adds some brightness to the chili. If you don't like cilantro you can use parsley instead

How to make Vegan White Chicken Chili
Step 1. Sauté the onion and peppers in a large pot or dutch oven over medium heat, until starting to soften.

Step 2. Add the garlic, cumin, chili powder, and salt. Stir and toast for 1 minute.

Step 3. Add the vegetable broth broth, seitan chicken, and beans. Bring to simmer.

Step 4. When the pot reaches a simmer, turn off the heat and stir in the non-dairy yogurt, lime juice, and cilantro.

Step 5. Serve with cilantro and more yogurt. Enjoy!

FAQ & Expert Tips
Store this dish in the fridge. It will last up to a week.
I used my vegan seitan chicken recipe because it is packed with protein and has a great chicken-like texture. However, seitan is not gluten-free, so if you are gluten-free, you'll need another protein option.
You can:
1) add more beans or crumbled tempeh - add another can or two of white beans, or grab a block of tempeh and crumble it into the soup when you add the beans
2) use a gluten-free vegan chicken. I recommend Abbot's Butcher chick'n - prepare the chick'n as instructed on the box, then add it to the recipe during step 3 when the seitan chicken would be added
