This Cherry Simple Syrup is a luxuriously sweet, decadent syrup made with fresh or frozen cherries. It’s perfect for mocktails, sodas, lemonades, and desserts, adding a naturally sweet cherry flavor.
Heat all the cherries, water, and sugar in a small pot over medium heat until the sugar melts. Use a whisk to mash the cherries into a pulp. Bring to a boil and let simmer 2 minutes.
Remove from the heat and stir in the vanilla.
Let cool for at least 10 minutes, then strain into a container. Store in the fridge.
