This Deli-Style Vegan Turkey Sandwich is a loaded sandwich made with vegan tofu turkey, classic veggie toppings, piled onto a soft baguette. Get the restaurant sub taste at home!
6SlicesVegan Mozzarella or Provolone Cheeseoptional
1Large Heirloom or Vine Tomatothinly sliced
¼Small Red Onionthinly sliced
1CupFinely Shredded Lettuce
½CupDill Pickle Slices
¼CupBanana Pepper Rings
Red Wine Vinegar
Instructions
Cook the tofu. In a small bowl whisk together the soy sauce, maple syrup, Italian seasoning, sage, and parsley. Heat the oil in a large skillet over medium heat. Add the tofu and cook for 4-5 minutes per side until golden (if your pan is smaller you may need to do this in two batches to get each piece cooked on both sides). Add the sauce and cook another 5-7 minutes, stirring occasionally, allowing the sauce to cook off completely.
Assemble the sandwich. Spread the bottom of the baguette with mayo. Add the cooked tofu, the cheese, if using, followed by the lettuce, tomato, onion, banana pepper, and pickles. If desired, finish with a drizzle of red wine vinegar. Close up the sandwich and slice into 3-4 servings.
Notes
**I used a softer French style baguette that was wrapped in plastic - not a crusty baguette that is found open/in paper. The softer baguette is more deli-style.Recipe inspired by Grilled Cheese Social.
